You may or may not be aware that Passover starts this Friday. I don’t celebrate Passover in any religious sense, but I do celebrate chocolate-covered matzoh, coconut macaroons, and flourless chocolate cake, so I have a soft spot in my heart for this holiday.
Let’s talk about flourless chocolate cake for a moment. There are 2 schools of thought on the subject. One type of recipe omits any flour-type ingredients entirely, making a cake from just butter, eggs, chocolate, and sugar. These cakes are outrageous. They’re a lot like eating a giant slice of truffle, only slightly more socially acceptable. Needless to say, I love them.
The second type of flourless chocolate cake uses a flour substitute, and that’s what this cake does. It calls for almond flour (aka almond meal, aka finely ground almonds) in the batter. The result is a cake that’s a little less dense and a little more moist and fudgy. I love this type too. (I’m an equal opportunity chocolate devourer.)
