It’s a sad fact of my life that I love breakfast foods, but rarely have the chance to make and enjoy them in the mornings. These days I’m lucky if I have the time to slice a few berries for my cereal bowl before you-know-who wants breakfast of his own. Actually taking the time to whip up a batch of muffins or waffles? Fuggedaboutit.
As a result, I have decided to revive the institution of BFD around my house. BFD, or Breakfast For Dinner, is the best of all possible worlds. Having breakfast for dinner gives me time to actually make breakfast foods, allows us to eat it at a more leisurely pace, and, with luck, means we get to enjoy our evening meal smothered with jam or syrup.
These Lemon Poppy Seed Scones seem like a breakfast or brunch food, but I am here to tell you that they also make a bang-up lunch, delightful afternoon snack, or nutritious delicious dinner. They come together quickly in a mixer, and have a nice balance of tart citrus, earthy poppy seeds, and a slight sweetness. Best of all, they can be frozen and then baked off as needed, so you can keep a stash in the freezer and enjoy a last-minute breakfast-ish treat whenever you want!
