How hot is it?
Well, if you read Redneck Words of Wisdom, you might be tempted to say that “it’s hotter than a billygoat with a blowtorch.” Or maybe “it’s hotter than two hamsters farting in a wool sock.” [I am a lady and I do not read such websites, but I do know how to work the google machine.]
However you want to describe it, it’s too warm for heating up the kitchen, so this week I have a few no-cook, microwave-only candy recipes. No billygoats or hamsters required.
This is the new favorite candy in my house, which is a BIG DEAL because we eat candy like other people drink water. Our candy palates, they are discriminating.
These Caramel Peanut Pretzel Bites start with peanut butter-filled pretzels (I buy mine from Trader Joe’s, but if you can’t find them you can use regular pretzel nuggets instead). They’re wrapped in a layer of caramel, dipped in melted chocolate, then finished with a sprinkle of salted peanuts. They’re chewy, crunchy, sweet, salty…bliss. Jason thinks I should figure out a way to make them full-sized, sell them in stores, and earn more money than Zuckerberg. I’m working on it.

Here’s a dirty little secret for you: I didn’t actually use Nutella to make this Swirled Nutella Fudge recipe. Instead, I used Jif’s knockoff “chocolate-hazelnut spread” and I give it two thumbs up. It was a bit cheaper than Nutella and the taste and texture were very similar.
Anyhow, all you need to make this beautiful swirled fudge are Nutella/knockoff hazelnut spread, white chocolate chips, and semi-sweet or dark chocolate chips. You can also make this recipe with peanut butter or other nut butters! Dooo it.
