This Festive Fall Layer Cake is the perfect way to celebrate autumn! A rich chocolate cake is filled with a caramel-pecan filling, and topped with gorgeous, edible fall decorations! I’ve provided full recipes for each component down below, but if you’re pressed for time, you can substitute a boxed cake mix or a faster frosting recipe. For the fondant decorations, I like to use this marshmallow fondant recipe
, but store-bought works just as well!
You can easily substitute real chocolate for the chocolate candy coating, but note that the proportions of chocolate and cream will be different. If you want to use a semi-sweet chopped chocolate bar or chocolate chips, start with using equal amounts of cream and chocolate by weight. I would recommend starting with 6 oz of chocolate and 6 oz of cream. Depending on the chocolate you use, you might need to add a touch more cream to get a smooth texture, but start with a 1:1 ratio and adjust it after everything is mixed. If you use milk chocolate, you will want to use less cream—start with 6 oz of chocolate and 4 oz of cream and go from there.
