ZUCCHINI CUPCAKES

Zucchini makes these homemade cupcakes super moist and delicious. Bonus: you can't taste any zucchini flavor AT ALL!

Grab Your Ingredients!

Lime juice

Zucchini

Flour

Eggs

Powdered sugar

Lime zest

Butter

Cream cheese

Oil

Brown Sugar

Salt + leaveners

Mix together brown sugar, eggs, and oil. Use a whisk to beat until smooth.

In a separate bowl, mix together flour, baking powder and soda, and salt.  Slowly add the flour mixture to the wet batter.

Bake the cupcakes at 350ºF for 20 minutes or until they are lightly golden. Cool completely, then add the frosting.
