ZUCCHINI CUPCAKES

Zucchini makes these homemade cupcakes moist and delicious. Bonus for the veggie skeptics: you can't taste any zucchini flavor!

Grab Your Ingredients!

Lime juice

Zucchini

Flour

Eggs

Powdered sugar

Lime zest

Butter

Cream cheese

Oil

Brown Sugar

Salt + leaveners

Mix together brown sugar, eggs, and oil. Use a whisk to beat until smooth.

In a separate bowl, mix together flour, salt, baking powder and soda. Add flour mixture to wet batter.

Shred the zucchini and zest the lime. Then add them to the batter.

Use a spatula to gently fold the zucchini and lime zest into the batter.

Line or grease a muffin pan, and use a cupcake scoop to fill the cups 2/3 full.

Bake the cupcakes at 350ºF for 20 minutes or until they are lightly golden.

Cool completely, then frost with cream cheese frosting!
