Combine water, light corn syrup, and granulated sugar in a medium saucepan.
Stir over medium-high heat until the sugar is moistened and dissolves. Brush the sides with a wet pastry brush to remove any sugar crystals.
Once it comes to a boil, insert a candy thermometer and continue to cook without stirring.
Cook to 290 F then remove from the heat. Wait until the boiling stops, then add food coloring and flavoring. Pour the hot candy onto a foil-covered baking sheet.
Let the candy cool until it is completely hard, then break into small shards to serve.
