This Candy Cane Cheesecake has a creamy peppermint filling, an Oreo cookie crust, and lots of candy cane pieces!

Pulse Oreos in food processor until fine, mix in melted butter and then pour crumb mixture into pan to bake.

Mix the cream cheese until light and fluffy.

Slowly add the sugar and flour until combined.

Add the peppermint extract. Then slowly pour in the heavy whipping cream and mix on low until combined.

Reduce the mixer to low  and add the eggs one at a time until incorporated, being careful not to overmix!

Lastly, fold in the crushed candy cane pieces until evenly distributed.

Pour the prepared batter into the springform pan and gently tap to release any air bubbles.

After baking and cooling, embellish with whipped cream and candy cane pieces.
