CHOCOLATE PEPPERMINT LAVA CAKES

Mini Peppermint Lava Cakes have a rich molten chocolate center. Embellish with candy canes and whipped cream for ultimate holiday fun!

Make the truffle filling: combine chopped chocolate, cream, and butter in a medium bowl. Melt and whisk until smooth.

Cool in the fridge, scoop and roll the ganache into round truffles.

For the cake batter: combine chopped chocolate, cream, and butter in a medium bowl. Heat and mix until smooth.

Then whip the eggs, yolks, and powdered sugar until frothy.

Add the melted chocolate to the egg mixture. Then add mint extract and flour to form a thick cake batter.

Divide the cake batter evenly between the ramekins and place a truffle in the center.

Bake the cakes until set around the edges, but very soft and jiggly in the middle. Invert onto plates to serve.
