Mix together the butter, cream cheese, and sugar. Then add the egg yolk, salt, and mint extract.
Slowly add the flour until just combined. Divide the dough and color half red.
Chill dough and then cut thin strips. Gently roll each strip to form a candy cane swirl.
Curve the top of each swirled cookie dough strip and place on a cookie sheet to bake.
