Christmas Pinwheel Sugar Cookies have a beautiful swirl of red, white, and green dough covered in crunchy sprinkles!

Mix the butter and sugar until light and fluffy. Then add in egg, vanilla and other dry ingredients until well combined.

Divide the dough evenly into three portions, add food coloring, and wrap well and refrigerate.

Roll out each color of dough between two sheets of parchment paper. Then stack the rectangles on top of each other.

Roll the dough up tightly into a log, roll in sprinkles,  wrap in plastic wrap, and refrigerate again.

Once the log is firm, use a large sharp knife to cut cookie rounds and bake!
