You will LOVE these easy no-bake cheesecakes! They're single-serving wonders that you can make several days in advance, and the pretty pastels are perfect for spring!

Crush shortbread cookies and mix them with melted butter. Press the mixture into the bottom of jumbo silicone muffin pans.

Whisk together unflavored gelatin and water. Once it's set, microwave briefly to melt it.

Whip together cream cheese, sugar, vanilla, and salt until creamy.

Mix in heavy cream and the melted gelatin. Divide into 4 portions and color each a beautiful pastel color.

Scoop the cheesecake batter into the pan, spreading each color in a thin layer with the back of a spoon.

Once all colors are added, freeze the cheesecakes until solid, then gently remove them from the pan.

Decorate with whipped cream, sprinkles, and candy eggs, then enjoy!!
